Treasure Hunt cookies

These cookies are pretty cool. They are an adaption of my Aunt Judy's "killer cookies" but they are like a treasure hunt to eat because you don't know if you'll get a walnut or a chocolate chip or a crasin in each bite. They are very exciting and pretty delicious too. The recipe is quite simple, although the ingredient list is a tad long. They are so good and worth the bit of effort it takes to make them. They'd be a great introductory recipe for kids because there are lots of things to measure and pour.

Onward, shall we?
Ingredients:
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon salt
  • 1.5 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 2 cups flour
  • 2 cups oatmeal
  • Half cup sweetened shredded coconut
  • Half cup chopped walnuts
  • Half cup chocolate chips
  • Half cup cherry crasins (or other dried fruit)
This recipe requires lots of mixing with a mixer of some sort and a stand up mixer is very convenient, and if you have on I'd advise getting it out and using it. I've made this recipe with a hand mixer before and it works just fine, but the stand up mixer makes things go a bit faster.

Procedure:

  1. Preheat oven to 350 degrees Fahrenheit (or you can plop the dough in the fridge for a couple hours and then bake the cookies, whatever is most convenient for you)
  2. Cream white and brown sugar with butter
  3. Add eggs and mix well
  4. Add salt, baking soda, and vanilla and mix well
  5. Stir in/mix slowly the oatmeal, coconut, walnuts, chocolate, and crasins(>>>)
  6. Bake for 10-12 minutes and allow to cool.
I was able to get 12 cookies on my large cookies sheet and 5 on the small using our pampered chef scooper: these cookies expand quite a bit.
Yield is about 3 dozen.

I took these goodies to Bible study and we enjoyed all of them. We also swam for a bit and had some fun goofing around with my waterproof camera.




Such a fun way to wrap up the end of summer!
