Every day is a good day for cookies, right?
How 'bout cake batter cookies?
Yep, the are pretty much the bomb.com amazing.
Back story; My church is super awesome and Tuesday night small group for high school kids is held at our small group leaders house. At the beginning of the school year we had a snack calender (snalender) but that was short lived. In the last couple weeks the weather has been sort of cold and rainy, the kind of weather that makes you want to just stay inside and bake. So that's what I've been doing, and I thought maybe I should try to recipes and use my small group folks as the guinea pigs. (they are not from Guinea, but some of the guys could be defined as pigs :))
Onward to the recipe!
I was browsing through Pinterest and I was disappointed by all the inactive links, so I turned to allrecipes, and was not disappointed. I found this recipe, and adapted it just a bit.
Ingredients:
1 lemon boxed cake mix
1 lemon
1/3 cup canola oil
Powdered sugar
2 eggs
Procedure: (Literally the easiest thing you will do in you life)
Preheat the oven to 375 degrees Fahrenheit
Preheat the oven to 375 degrees Fahrenheit
Open the boxed cake mix. Add eggs and oil.
Zest about 50-75% of your lemon (after you've washed it, of course). Now roll your zested lemon of the counter for a minute (this helps get it juicer #truestory). Next you cut and juice your lemon. And strain the seeds, of course.

Add the juice to your mix. I used about a tablespoon and a 1/4, but you could use more or less. Also, I allowed a little pulp in the mix. I like my lemon to be tart. Mix it all together now. (two hops this time (two hops this time), left foot right stomp...)
Last thing left to do is to scoop your dough into balls and plop them on a cookie sheet before dusting with powdered sugar.
Bake at 375 for 6-9 minutes. They wont look all that done, but they will be done..
...and shabang, we have the best, easiest cookies ever!
The original recipe said the yield was 36 cookies, but I only got 19, and they weren't even all that large, so be warned. It would be SUPER easy to double a batch though.
My small group loved them. I will most definitely be making these little guys again.
Now go on and make yourself some cookies!
