These balls are sweet, salty, chewy, and remind me of pizza crust, and I love pizza crust.
Jessica selected this fine recipe for Pao de Queijo (or Brazilian cheese bread)
We adapted it a tad, and here it is-
4 cups tapioca flour (we used this brand)
2/3 cup water
2/3 cup soy milk
2 tablespoons salt
4 beaten eggs
3 cups fresh Parmesan cheese
Procedure:
Preheat the oven to 375 degrees Fahrenheit
Mix the butter, water, milk, and salt in a saucepan over high heat until the mixture boils. As soon as it has boiled remove it from the heat and slowly fold in the tapioca flour.
Once it's mixed in, transfer to another bowl to let rest for 10 to 15 minutes.
After it's had it's rest, mix in the eggs and the cheese. Mix this up good and well. It gets thick pretty quick, so you may want to switch off with your baking buddy. Once the dough is fairly consistent form them into balls, about the size of a regular spoon.
Arrange these balls on an ungreased baking sheet and bake for about 15-20 minutes. Yield was about 35 2 bite sized balls.
These little munchkins are SO SO SO good! Crisp and chewy and savory and sweet and salty all at the same time!
Oh the fun of baking with friends! This girl is so spunky, and baking together was a blast!
