Lemon Muddy Buddies

Lemon muddy buddies. Yeah, random, I know. But why, why not? Spring is upon us and I couldn't find a reason to not try it. I mean, Lemon folks, lemon! If that does not scream spring I do not know what does. Onward to the recipe!


I used this recipe from our old friend, Betty Crocker

Ingredients:
9 cups of rice Chex cereal

1/4th cup of butter

1 and 1/4th cup of powdered sugar

1 and 1/4th cup of white chocolate chips

2-3 lemons to gather:
                                   4 teaspoons grated lemon peel
                                   2 tablespoons lemon juice

Procedure:

Measure out 9 cups of chex and set aside

Throw your butter and chocolate chips in a microwave safe bowl

Zest your lemons good and well.

Dump all your nice, aromatic zest in with the butter and chips.

Now juice every ounce of sour juice out of that fruit.

Yep, get it all

Alright, now microwave the juice, zest, butter, and chips together on high for 1 minute. Then stir and continue to microwave until smooth.

Now cover some counterspace with wax paper. I found that it stayed on my countertop best and didn't slide all over the place if I put a few drops of water under the wax paper.
The next step was tough to do and photograph, so i'll just describe it to you, okay?
Take the 9 cups of chex you set aside, and pour your microwaved mixture over top. Take a large mixing spoon and stir it, being VERY gentle so you don't crush all your little cereal squares. Once the liquid is fully incorperated, slowly and carefully transition the mix from your bowl to a ziplock bag,

Now dump the powdered sugar in the bag, and shake  it up really well
 (While listening to this fine song)


Keep Shaking until they are all coated and look something like this

Got them all shaken up really well? Now dump the bag onto your waxed paper



Spread them out...

...and give them time to dry and harden.


Serve in your most fun, colorful, festive bowl!

Refection: I like the recipe as a snack, but it's not exactly a dessert. It is sweet, sugary, and a little bit fruity. I like, I like. This is a breeze to throw together, and is realitively inexpensive as well. My only issue with this recipe is that it produced a few more dishes for my liking. This could very well be because I am an inexperienced baker kitchen user, and I struggle to plan ahead when it comes to kitchen utensils. I shared a bowl of this goodness with my Small Group, and I few of my friends at school, and it was well received. I could see myself making this again.
