12 apples
(We used gala, honey crisp, pinata, and fuji)

(We used organic because we are just that fancy)

Now you must wash and slice all these apples. We used this Pampered Chef apple peeler/slicer/corer to do the job. It makes this step a breeze, let me tell ya.
Once you have all your apples ready, pour a little apple juice in your pan (enough to cover the bottom in a thin layer)
Then bring your apples and juice to a boil on medium heat, while covered.
Once the juice has boiled bring the apples to a simmer and cover until your apples are soft and able to be mashed (about 30 minutes-but it may take longer, depends on your fruit)
It will take a while to actually start 'saucing'
Once it has reached the mushy phase you will wanna start mashing them up to your liking. We prefer chunky sauce, but whatever floats your goat. Once it is mashed and has begun saucing, slowly mix in cinnamon and sugar, tasting as you go.
Once it has reached the level of sweetness you prefer, slowly mix until it has reached prime saucyness.
We like it about this consistency.
At this phase there is about 1.5 centimeters of fluid of the bottom of our dish
Taste it as you go, and when you like it, stop messing with it, take it off the heat, and enjoy!
